Adai dosai is a healthy tiffin item. If the batter is ready then a healthy breakfast or dinner is ready in few minutes. The batter is having mixed all of dals which make the dosa a healthy one.
Now let’s see how to make the adai dosa.
Ingredients:
To grind batter:
Boiled rice – 2 cups
Channa dal - ¼ cup
Toor dal – ½ cup
Urad dal - 2 spoons
Red chillies - 8
Hing – 2 pinch
Salt
To add in batter:
Small onions – 25
Curry leaves
Finely chopped ginger – 1 spoon
Finely chopped or grated coconut – ¼ cup (or 3 spoons)
Preparation method
1. Wash and soak the rice for 2 hours.
2. Put the red chillies also along with rice to soak
3. Wash & soak the dals together for 2 hours minimum.
4. For grinding 1st drain all the water from rice.
5. In a mixer jar, take the soaked red chillies, salt and hing
6. Grind it coarsely without adding water.
7. Then add the drained rice and grind it like rava adding required water.
8. Take out the batter and keep separately in a mixing bowl
9. Drain water completely from dal and add the drained dals into jar and grind it coarsely adding less water.
10. Take the ground dal and mix with rice batter.
11. Add 1/2 spoon of hing and mix well.
12. Let the batter ferment for 4 hours.
13. If you don’t want sourness in the batter, you can also make this adai instantly without fermenting the batter. Try to cook one dosa immediately and check the taste without sourness.
After fermentation
14. Just before making dosa, add finely chopped onions, ginger, coconut and curry leaves mix well.
15. If you think the batter is very thick then add 1/4 cup of water and adjust the consistency. It should be thick but not very thick.
16. Heat dosa pan and pour a ladle full of batter. Spread it & make it thick or thin as per your wish.
17. After making dosa, keep the flame medium high and drizzle a tsp of oil over the adai.
18. Close it with a lid & cook for a minute. Then flip the dosa, add little oil if necessary & cook for a minute again.
Note:
1. While grinding, don’t leave the mixer for continuous grinding give break of 10 seconds in between. Otherwise the batter will become hot and taste will be changed.
2. You can replace rice with multi grains whatever you want like varieties of millets to make adai healthy one.
3. Coconut chutney will go well with this spicy adai dosa.
