Sivappu Aval Upma | Red Flattened Rice

    Red poha or red rice flakes is nothing but flattened rice made from red rice.  Red poha nutrition value is high compared to white rice flakes. I did not know about this till the time one of my friends Jayanthi told me. For health concern, now I started buying Red rice flakes.
The rice flakes are easy to cook and can be made into a meal in minutes. So I used to cook Aval very often at my home for dinner after I return from office.
Ingredients:

·         Sivappu Aval/Red Flattened Rice – 2 cup
·         Onion – 1 Big
·         Tomato – 2 Medium
·         Green Chilies – 4
·         Oil – 2 tsp
·         Peanuts – 10 Nos (optional)
·         Mustard – 1 tsp
·         Urad Dal – 1 tbsp.
·         Channa Dal – 1 tbsp.
·         Jeera – 1 tsp
·         Curry leaves – few
·         Corriander leaves – few
·         Carrot – 1 big (Optional)

Preparation:
1.      Wash Aval/Poha thoroughly 2 0r 3 times using drinking water and drain completely
2.      Sprinkle just 2 tbsp. and leave it for some time. It will turn in to very soft and puffed rice.
3.      Finely chop the Onion, green chilies and tomatoes.
4.      In a nonstick pan heat a tsp of oil.
5.      Add peanuts and fry for a minute.
6.      Once the peanut color changes take it and keep aside.
7.      In the same pan add the left over oil and add mustard.
8.      Once the mustards splutter add Urad Dal and Channa Dal and fry for few seconds.
9.      Add Jeera and Onion, fry for a min. Once the onion becomes transparent add tomatoes.
10.  Now add little salt and turmeric for quick process.
11.  Grate the carrot while the tomato is getting cooked.
12.  Once the tomatoes become gooey add the grated carrot and fry for 2 minutes till the carrot color changes.
13.  Now add a tsp salt with the soaked Aval and mix well.
14.  Once the carrots color changes add the soaked Aval and fry for 3 mins.
15.  Now add the fried peanuts and fry for few seconds and turn off the stove
16.  Garnish with Corriander

Note:
ü  Adding Carrot and Peanuts is optional.
ü  Soak the Aval just before 5 mins before you start cooking. It should be used immediately else the same task you have to do soaking and straining.
