Creamy Sweet Corn Soup


                I like only tomato soup and sweet corn soup. At home I always prepare tomato soup but whenever we go out I prefer to order sweet corn soup only. This is because I am such a lazy person just to remove corn kernels. Today seeing the beautiful corn I wanted to have sweet corn soup. So immediately I bought this and tried first time. It came out delicious.  Here the recipe for you to make this tasty sweet corn soup. You also try to prepare this and enjoy.
Now let’s see the method to prepare Creamy Sweet Corn Soup.




Ingredients:
Sweet corn – 1
Butter – 1 tbsp
Onion – 1 small to medium size chopped finely
Coriander leaves – 1 tbsp finely chopped
Spring onion – 2 tbsp chopped green part
Green chilli – 1 finely chopped
Garlic – 2 clove (if big use 1 clove)
Corn flour/ starch – 1 tsp
Sugar – ½ tsp
Salt – As needed
Pepper – as needed
Water – As needed


Method:
Take sweet corn, clean the leaves and fine strands. 

 
 

Now remove the kernels using sharp knife. Pressure cook with a cup of water

Reserve a handful of cooked whole kernels in a separate bowl to garnish.
Drain the water, cool down and blend the kernels to a smooth paste using mixer. 
Chop onion, garlic, coriander leaves and spring onion green part finely.
Heat butter in a pan, add in garlic, onion and fry till transparent.
Add in the pureed sweet corn and the reserved water. Boil for 3 to 4 mins.


Add coriander leaves, green chilies, reserved whole corn and cook for 4 mins. Add sugar, salt and pepper. Mix well.
Take corn flour with some water, mix well and add to the soup. Cook for few more mins.


Finally garnish with spring onion and switch off the flame.
Serve hot and Enjoy!


Note:
If you don’t want you can skip onion and garlic.
You can also add milk in this replacing the reserved water.

Green chilies are optional if you want less spiciness then you can omit.
