Ridge gourd with Tomato gravy




This simple gravy with ridge gourd and tomato can be served with steamed rice or dosa. This is easy to cook and yet healthy and delicious. You can also make delicious chutney with the rough skin peeled from the ridge gourd.
Let’s see how to prepare this easy gravy with ridge gourd and tomato.



Ingredients
              Ridge gourd/Peerkangkai – 1 (peeled and finely chopped)
Tomato – 3 medium sized
Onion – 1
Green chilies - 2
Mustard – 1 tsp
Urad dal – 1 tsp
Channa dal – 1 tsp
Chili powder – 1 tsp
Turmeric powder – 1/2 tsp
Salt as required
Oil – 1 tbsp
Water – 2 tbsp
              Garlic – 3 cloves (optional)


Method:
Wash the ridge gourd and peel the skin.
Chop the veggie finely.
Chop onion, green chilies and tomatoes and keep separately.
Now heat oil in a kadai and add mustard, jeera, urad dal and channa dal.
Once the dal color changes to golden, add chopped onion, curry leaves and green chilies and Saute well. Add garlic.


When the onion color changes, add in the chopped ridge gourd and mix well.
Cover and cook for 5 mins till the veggies cooked well.


Once the veggies are cooked, add in the tomato and mix well
Add chili powder, turmeric powder and give a quick stir.
Add required salt and 2 to 3 tbsp of water and mix well.
Cover and cook till the tomato becomes gooey.


Once tomatoes cooked, add coriander leaves and mix.


Transfer to serving bowl. 


Enjoy with hot  steamed rice or chappathi!

Note:
Add tomatoes after the ridge gourd cooked well. Sometimes the veggie will not be cooked because of the tomato.
Some ridge gourd gives bitter taste. So taste it before start cooking.
