Baby potato fry



Potato is favorite one for many people. This is so versatile vegetable and you can make uncountable no. of dishes out of this. Today I have used baby potatoes to make this fry. I bought this baby potato first time and tried. It came out really well and tasty.

Let see how to make this fry.

Ingredients:
Baby potatoes – 15
Salt as needed
Water to pressure cook potato
To temper:
                Oil – 2 tbsp
                Mustard seeds – 1 tsp
                Urad dal – 1 tsp
                Red chilly – 1
                Red chilly powder/ Sambar powder – 1 ½ tsp
                Curry leaves
                Jeera/Cumin seeds powder – tsp
                Coriander powder – 1 tsp
                Salt as needed

Method:
First take washed potato, salt and water in a pressure cookware. Cook for 1 or 2 whistles not more than that.
Once the pressure subsides, wash once again with cold water and remove the skin
Keep the potato aside
Now take a non-stick pan and add oil
When the oil is hot, add mustard seeds and Urad dal.
After the mustard seeds splutter and Urad dal changes color, add red chilly and curry leaves give a quick stir and add in cooked potatoes.
Fry for 10 mins. Toss well in between
Add red chilly powder, coriander powder, jeera powder, salt and toss well so that the spices will be coated potato evenly.
Fry for 10 mins. Add more oil if required and toss well.
Don’t use ladle. Toss well to get even coating of spices.
Yummy potato fry is ready. Have it with hot rice with rasam or curd rice.
This goes well for chapatti or any time of roti also.
               
Note:
Don’t overcook the potato. If you overcook then the shape will go while tossing.
You can add garam masala also.
