Kathirikai Porial | Brinjal / Eggplant fry


                Brinjal is one of the tastiest vegetables. It is so versatile and so you can use it in any type of curry or gravy. Brinjal is my favorite vegetable, but my hubby doesn’t like it and so rarely cooking this after marriage. Today I prepared Brinjal porial after a long time. It came out really well. He liked it very much. Now I am very happy. Do you know why? Because, I can prepare this porial very often.. J
Let’s see how to prepare this spicy brinjal porial.



Ingredients:
Kathirikai/Eggplant – 250 gms
Onion – 1 medium size (I have used shallots)
Red chili – 2
Curry leaves
Oil – 1 tbsp
Kadugu/Mustard seeds – 1 tsp
Ulundhu /Urad dal – 1 tsp
Kadalai parupu/Channa Dal – 1 tsp
Seeragam/Jeera/Cumin seeds – 1 tsp
Chilli powder/Sambar powder – 1 tsp
Turmeric – 1/4 tsp
Garam masala – 1/2 tsp
Grated coconut – 2 tbsp
Salt as needed
Method:
Chop the Eggplants into small pieces and keep it immersed in water to avoid color change.
Finely chop the onion.

Ingredients


Now take a heavy bottomed pan, add a tbsp. of oil.
When the oil is hot, add mustard seeds, wait for sputtering, and add in Urad dal and Channa dal.
 Once the dal changes to golden color add chopped onion, red chili and curry leaves.
Fry for 1 min or till the onion changes to pink color
Add chopped eggplant and fry for 2 mins.

 Add chili powder and salt. Stir well.
Close the pan with lid, reduce the flame low and cook for 6 mins. Stir in between to avoid burnt at bottom.
No need to add water, just close with lid and cook in low flame.
One the eggplant is cooked, add garam masala and fry for a min.
Add grated coconut, mix well for 1 min and switch off the flame.

Keep it closed till you serve. Just before serving transfer to serving bowl.
Wow… yummyyy kathirikai porial is ready. A perfect side dish for rasam or curd rice. It tastes good when you mix with hot rice and chapatti also.

Note:
Eggplant with less seed goes well for this curry.
You can have is curry for chapatti also.
