I like to have Pumpkin along with curd rice. This also goes well with plain hot rice. Pumpkin is good for health. This is one of the very low calorie vegetables with no saturated fats or cholesterol; however, it is rich in dietary fiber, anti-oxidants, minerals, vitamins. The vegetable is one of the food items recommended by dieticians in cholesterol controlling and weight reduction programs. Pumpkin is a storehouse of many anti-oxidant vitamins such as vitamin-A, vitamin-C and vitamin-E.  The fruit is a good source of B-complex group of vitamins like folates, niacin, vitamin B-6 (pyridoxine), thiamin and pantothenic acid.  It is also rich source of minerals like copper, calcium, potassium and phosphorus.
Let see the ingredients list and the method to prepare this heathly porial.

Ingredients:
Yellow Pumpkin | Parangikai – 2 cups chopped
Onion – 1
Red chilly – 2
Chilly powder – 2 tsp
Salt
Coconut – ½ cup grated
Jagery/sugar/palm sugar – 1 tbsp

For seasoning
Mustard – ½ tsp
Urad dal – 1 tbsp
Curry leaves

Method:

Chop pumpkin to 1 inch pieces and keep aside
Chop onion finely
Now take a wide mouth pan with lid
Add oil and when it is hot, add in the items mentioned under seasoning
Now add onion and red chilly and fry for some time till the onion changes color slightly
Now add chopped pumpkin
Fry for 2 min in high flame.
Add chilly powder and salt as per your taste, mix well and cook for a minute
Now Sprinkle little water (1 tbsp not more than that) and mix well
Close the lid and cook for 5 to 7 mins in medium low flame till the vegetables get cooked.
Once the pumpkin cooked nicely, add jagery/sugar/palm sugar, mix well and cook for a min.
Finally add the grated coconut, mix well for 1 min and switch off the flame.
Delicious pumpkin fry is ready.
Have this with hot rice or side dish for curd rice.

Note:
If your pumpkin is not sweet than add ½ tbsp. more jagery
Don’t add more water to avoid the pumpkin turns gooey
Cook it in medium or low flame
